-Chicken broth or bone broth
-Chicken Breast – chopped or shredded
I normally cook down my chicken carcass after I have made roast chicken – I add an onion, celery, carrots to the boiling water and let it simmer for a couple of hours before removing the bones and straining the broth which I use for sauces and soups.
This is such an easy thing to make, you can either steam a few chicken breasts or use the left overs from roasting a chicken.
For the vegetables – I normally blanche for about 3-4 mins so they are still nice and crunchy – blanching also keeps all the goodness in – literally throw them into boiling water and then drain.
Heat the broth through and then add the ingredients into each individual bowl
You can add some soy sauce and fish sauce.
Sprinkly chillies on top and coriander to taste.
You can also add some sriracha sauce if you like it to have a real kick.
This is such a healthy, easy supper that my boys and I love to make and assemble together, perfect for the colder weather to warm you up from the inside out.
