Miso Aubergine


  1. 1 large aubergine
  2. Miso paste
  3. Ginger (optional)


  1. Wash & cut aubergine lengthways
  2. Score the cut side of the aubergines diagonally, forming a diamond pattern in the flesh
  3. Fry the halves until lightly browned, about three minutes. Turn over and lightly fry the other side for a further minute or two
  4. Spread the sweet miso paste into the scores with a little ginger 
  5. Place them under the grill.
  6. Grill until the miso topping is just beginning to brown and bubble slightly, but don’t allow it to burn.
